Yummy Recipes and Kitchen Shenanigans!

    Two ingredients and 15-minutes are all you need to make yourself some semi-homemade Pop-Tarts!  It really doesn’t get any easier than this recipe and you can totally customize it to the flavors you love.  Who needs a toaster, when you can have piping hot Pop-Tarts straight from the oven?! I first discovered Jamnation Jams because of Foodlyn, who had sent me three jars of their delicious jam several months ago.  I used those jars to make Oatmeal Jam Bars, Peanut Butter and Jam Blondie Bars, and Vanilla Greek Yogurt Loaf Cake with Berry Jam Glaze.  So when I saw on Instagram that Gillian, at Jamnation Jams, had just finished creating some new flavors of jam, I knew I had to get my hands on a jar!  Gillian sent me a jar of one of her newest jams: Plum and Get It.  The jam is “king flavor plot jam with honeysuckle essence.”  Damn good jam that you just can’t buy off the supermarket shelf!     Brown Sugar Blondie Bars full of chunks of B. Toffee milk chocolate pecan toffee.  An easy, one pan dessert that can be whipped up in mere minutes!  These blondies are rich in flavor, stay soft for days and are a great dessert for a party, because these will feed a crowd.  Leftover Halloween candy??  These blondies would be great for adding leftover Halloween candy into too! At work we have training days….four of them a year.  We spend the entire day doing various mandatory training, that keeps us police officers up to date on required information and skills.  So I had training day the other day, and silly me for walking into training day empty handed.  Everyone looked at me walk in and then asked me where the treats were.  There were no treats because I had been too busy the day before.  I am a busy girl!!     It’s all the Fall harvest flavors we love, wrapped up in one cookie!  A cookie dough spiced with cinnamon, nutmeg and pumpkin pie spice, with pumpkin spice granola added into the cookie dough.  The granola is made up of crunchy oats, pumpkin seeds and dried cranberries….all the flavors of Fall!  And because there’s no pumpkin puree in this cookie, the texture of this cookie is just like a chocolate chip cookie. I love this cookie dough!  Rich with spices.  You could add any variety of granola or chocolate chip to the dough, or don’t add anything at all.  I added Pumpkin-Spiced Granola that My Favorite Indulgence sent me.  Their granolas are all so yummy…and they even have some nut free granolas for anyone who loves granola, but who also has a nut allergy.  So definitely check out My Favorite Indulgence!   • 11/07/17--05:00: Banana Nut Bread
  • Banana Bread.  Mmmmm…made from scratch, full of ripe bananas, spices and nuts.  People love banana bread and I swear everyone is always asking for me to make a loaf.  It’s so easy to make, I am not sure why I don’t make it more often!  And this recipe makes two loaves….one for you and one for family or friends!  Or freeze the second loaf for later.  I definitely wouldn’t blame you for keeping both loaves all to yourself 🙂 Banana bread is one of those recipes you have to plan for right?  I mean, you need ripe bananas.  I usually have a collection of over ripe bananas, saved in a freezer-proof ziplock bag, stashed in the freezer.  I will add a stray over ripe banana whenever I find one in the pantry.  And then when I have enough bananas, it’s time for banana bread!  I have one banana bread recipe on the blog already (which I LOVE), but I wanted to make one with nuts, because that’s traditional.  Or at least I think it is.  It’s yummy nonetheless.   • 11/09/17--07:43: Corndog Muffin Cups
  • Cornbead and hot dogs, baked in a muffin tin, for an easy and healthier alternative to corndogs!  This recipe is portable, kid-friendly food, but is also a great party food.  It takes just a few minutes to make this recipe, since we are using store-bought cornbread mix and hot dogs.  Don’t you just love easy, but oh-so-yummy recipes??!!! With football season in full swing, on top of school for the kids, and the upcoming holidays, you will definitely want to pin this recipe for later, so you will have it in your back pocket when you need a fun little something to whip up.  And because these Corndog Muffin Cups are baked in cupcake liners, it makes for portable food when you need to eat dinner on the way to sports practice or want easy party/holiday entertaining food that doesn’t require a fork.   • Popcorn decorated cupcakes for a movie themed party!  These cupcakes are super fun, so I totally had to share my tutorial with you on how to make popcorn decorated cupcakes.  Mini marshmallows are cut with scissors and then painted with a touch of yellow food coloring, to look exactly like popcorn.  It’s super easy! How fun would a movie theater themed party be??  Serve (real) popcorn, big boxes of candy, pizza and these cupcakes…all while watching a movie.  I love this party theme for older kids and teenagers, because sometimes it’s hard to find a “cool” theme for older kids’ birthday parties.  Because who doesn’t love going to the movies?? SUPPLIES: Cupcakes and frosting Red and white striped cupcake liners Bag of mini marshmallows Yellow gel food coloring Clear white sparkling sugar I squished three mini marshmallows together, then took clean kitchen scissors and snipped the top of one of the marshmallows across the top, in the shape of an x.  Gently use your finger to push your finger into the x to separate the top of the marshmallow where it was cut.  If the marshmallows are sticking to the scissors, spray the end of the scissor blades with baking […]

    Vanilla Pudding Pie.  It may sound plain, but I assure you it’s anything but that!  Homemade, from scratch vanilla pudding, layered onto a Vanilla Chai cookie crust.  And it’s all gluten free!  The proof is in the pudding here, that gluten free can taste just as amazing as regular dessert recipes. Please don’t be scared away by making your own homemade pudding.  It really is easy…just follow all the steps in the recipe!  And after you make homemade pudding, it’s kind of fun to brag about how you made pudding from scratch because people (unknowingly) think homemade pudding is difficult to make.  But it’s not.  Trust me 🙂 When Bakeology sent me a box of their gluten free cookie bites to use when creating recipes, I knew I was going to use their Vanilla Chai Crunchy Cookie Bites in a vanilla cream pie.  Because I figured these cookies would make a great cookie crust and I love a cookie crust!  And this recipe is accidentally gluten free.  I don’t eat gluten free, but who needs gluten in this yummy recipe anyways?!  You won’t miss it!     Chocolate fudge cake mix, turned into soft, chocolatey cookies instead!  Cake mix cookies are easy to make, are made in one bowl and just a few ingredients are needed to make these.  After making (and loving) my previous cake mix cookies, I decided to make a chocolate cake mix variety, but add a special ingredient to make these extra fudgy! Chocolate cookies can be tricky to bake, because it is easy to over bake, resulting in dry cookies (sad face).  Follow the directions in this recipe, and I promise you soft chocolate cookie success!  For my cookies, I bought the fudgiest chocolate cake mix I could find. Adding thick chocolate fudge sundae sauce to these cookies is what makes these cookies soft and fudgy…so don’t leave it out! I had some leftover buttercream frosting from some cupcakes I had just made, so I plopped a dollop of frosting in between two of these cookies.  It was like a super soft Oreo cookie!  You could always use some store-bought frosting if you wanted to make cookie sandwiches too.  Yum 🙂 XOXO, Kelly
